Our fascination with salmon leather comes from Irish mythology, in which there is the legend of the Breadan Feasa, "The Salmon of Knowledge":

Mythical hero Fionn MacCumhail was, as a young man, in training to become leader of the "Fianna"-brave warriors who were custodians of ancient Ireland.
Finegas, Fionn's mentor, used to regale the younger man with wild stories and colourful tales, one of which featured the Breadan Feasa. It was said that whoever first ate the flesh of this fish would become the wisest man in the world. After many years Angling on the banks of the historic river Boyne, Finegas finally landed the fabled fish.
He then ordered young Fionn to prepare a great fire of Ash branches and to cook the fish. Rotating the Salmon on a spit above the fire, Fionn noticed a blister on its skin. Curious, Fionn prodded the blister and burnt his finger. To sooth the pain, Fionn sucked on his finger and in doing so was the first to taste the flesh and so became the wisest man in the world. Finegas was happy as his protégé was now destined to be the greatest leader to ever head the mighty Fianna.
